Avoid “&”,”+”,”/”,”%” and (right now) dashes “-“, tumblr tags don’t know what to do with these and if someone clicks on that tag on your blog they will go nowhere.
You can link people to these tagged pages in your sidebar, or in your blog just use
http://YOURBLOGNAME.tumblr.com/tagged/TAGYOUWANTOSEARCHFOR
For example, my Nina Dobrev tag looks like this:

%20 it’s what tumblr turns the spacebar into, you can also use an underscore and tumblr will still find it.
